Cut stems off jalapenos, then cut length wise and remove seeds. Then fill with stuffing mixture and wrap with 1/2 slice of bacon securing with toothpick. Smoke at 220 degrees for 2-3 hours until bacon is tender.
Stuffing Mixture
1 lb chorizo
1 cup shredded cheese
Or experiment with whatever stuffing you like. Can also be done with mushrooms by removing the stems.
