Angelfood Cake
1 c. sifted cake flour
3/4 c. sugar
1 ½ c. egg whites ( 12)
1 ½ tsp. cream of tartar
½ tsp. salt
1 ½ tsp. vanilla
3/4 c. sugar
Sift flour with 3/4 c. sugar; set aside. Beat egg whites with cream of tartar,
salt and vanilla till stiff enough to form soft peaks. Add remaining 3/4 c sugar,
2 Tbsp at a time, continuing to beat till egg whites hold stiff peaks. Sift about
1/4 flour mixture over whites, then fold in. Repeat, folding in remaining flour.
Bake in ungreased 10″ tube pan at 350 for 35 to 40 minutes or till done. Invert
cake pan and cool.
