1 chicken breast fillet  (I prefer leftover smoked chicken)
1 tablespoon vegetable oil
2 tablespoons minced red bell peppers
1 tablespoons minced onions
1⁄3 cup frozen corn
1⁄4 cup canned black beans, rinsed and drained
2 tablespoons diced canned jalapeno peppers
1/2 tablespoon minced fresh cilantro
1⁄2 teaspoon cumin
1⁄2 teaspoon chili powder
1⁄4 teaspoon salt
1 dash cayenne pepper
3⁄4 cup shredded jack cheese

1 Package Egg roll Wrappers

 

I found one ice cream scoop (the big cookie dough scoop style) is the right amount for one egg roll.  Then fry at 350 degrees for 4-5 minutes.  These freeze well.  Quick 1-2 min fry before freezing to help seal.  Wrap egg rolls, then freeze on wax paper lined cookie sheet for 2 hours, then package together for longer freezing.
