Combine 1 beaten egg, 2 Tbsp milk, and ½ tsp salt.  Add enough all-purpose flour to make stiff dough, about 1 cup.  Roll very thin on floured surface; let stand 20 min.    Cut and let dry about 2 hrs. To cook, drop into boiling broth or boiling salted water and cook uncovered about 15 to 20 min.  Makes about 3 cups cooked noodles.  Recipe may be doubled or tripled.
